The Müller Thurgau DOC Aristos 2025 from Kellerei Eisacktal comes from high-altitude, steep vineyards around Säben Monastery in South Tyrol’s Valle Isarco. The vineyards lie between 800 and 970 metres above sea level and are characterised by shallow, mineral-rich, gravelly soils formed from weathered diorite. The climate, particularly well suited to Müller Thurgau, together with the well-aerated soils, creates distinctive conditions for an expressive mountain wine. The Aristos range represents a selection of the winery’s top wines. Strict vineyard selection and limited yields form the basis for pronounced varietal character, complexity and ageing potential.
The grapes are harvested exclusively by hand. After a short period of skin contact and gentle pressing, fermentation takes place under controlled temperatures. The wine then matures for ten months on the fine lees, partly in stainless steel tanks and partly in large wooden casks. In the glass, it shows a yellow to lightly straw-yellow colour. The intense and pleasantly aromatic bouquet combines exotic fruit with delicate nutmeg notes and mineral nuances. On the palate, it is dry, fresh and mineral, supported by lively acidity and a clear, precise structure.
