The Riesling DOC “Bergspiel” 2025 from St. Pauls Winery is an elegant white wine from South Tyrol that reflects the alpine freshness and the diversity of vineyard sites around Appiano. The grapes come from several vineyards located in Eppan-Berg, Montiggl and Völs am Schlern at elevations between approximately 400 and 900 metres above sea level. Limestone and clay soils together with the cool mountain climate give the wine its precise structure and distinctive mineral freshness. The wine is made from Riesling. This historic grape variety originates from the Rhine region and is considered one of the noblest white grape varieties in the world. It is especially valued for its aromatic clarity, vibrant acidity and its ability to clearly express the terroir of a vineyard. For the Riesling “Bergspiel”, fermentation takes place slowly at controlled temperature in stainless steel tanks, followed by several months of ageing on the fine lees, helping preserve freshness and structure. In the glass the wine shows a pale straw-yellow colour. The nose reveals aromas of apricot, white melon and quince, accompanied by subtle notes of lime zest, fresh thyme and flint. On the palate the Riesling is lively and mineral, supported by firm acidity and intense aromatics that lead to an elegant and precise finish.
