South Tyrolean Überetsch
The Sauvignon DOC 2025 from San Paolo Winery is an aromatic white wine from South Tyrol that reflects the fresh and precise style of the vineyards around St. Pauls in the Überetsch area. The grapes come from vineyards located between 300 and 700 metres above sea level, where morainic soils, porphyry and dolomite, together with the Alpine climate, create ideal conditions for viticulture. Strong temperature differences between day and night help develop intense aromas while preserving the grapes’ lively acidity. The wine is made from Sauvignon Blanc. This internationally grown grape variety is known for its expressive aromatics and vibrant acidity. In South Tyrol it produces elegant and precise wines with clear fruit, herbal nuances and a distinctive mineral character. In the glass the wine shows a pale straw-yellow colour with slight green reflections. The nose reveals typical aromas of elderflower, grapefruit and gooseberry, accompanied by subtle herbal and grassy notes. On the palate the wine is fresh and lively, with precise fruit, vibrant acidity and a mineral structure. The finish is clean and elegant.
