Merlot DOC 2025 from Bozen Winery is made entirely from Merlot. The grape variety has been cultivated in South Tyrol for more than a century. The grapes come from selected warm hillside sites in the Adige Valley and around Bolzano, at approximately 300 metres above sea level. These sunny, sheltered vineyards provide ideal conditions for a red wine with a fruit-driven and gently spicy character. Harvest takes place from early to mid-October. After picking, the grapes undergo traditional fermentation on the skins. The wine then completes malolactic fermentation in stainless steel. A short period of bottle ageing rounds off the maturation process while preserving the approachable and varietal character of Merlot. In the glass, the wine shows a dark ruby-red colour. The bouquet recalls dark forest berries, accompanied by fine spice, dark chocolate and subtle notes of hay. On the palate, it is expressive and full-bodied, with a soft, harmonious structure and a pleasantly rounded overall character.
