Cabernet Sauvignon Riserva DOC Doss
Girlan Doss Cabernet Sauvignon Riserva DOC 2023 comes from two different wine-growing areas of South Tyrol. Part of the grapes are grown on well-ventilated slopes in the Überetsch area at around 400 metres above sea level, while another portion comes from the warmer vineyards of the western South Tyrolean Unterland at approximately 300 metres. Here, the vines grow on deep, sandy soils. The grapes are harvested by hand and transported to the winery in small containers. After destemming, the crushed grapes are transferred by gravity into stainless steel tanks, where alcoholic fermentation takes place over 15–20 days. Following malolactic fermentation, the wine matures for 18 months, partly in large oak casks and partly in barriques, followed by a further six months of bottle ageing. This extended maturation contributes to its Riserva character. It pairs particularly well with red meat, game and full-flavoured cheeses. In the glass, the wine displays an intense colour. The bouquet combines blackcurrant, ripe fruit and fine spicy notes. On the palate, it is full-bodied and elegant, with fine, rounded tannins and a persistent finish.
