The Gewürztraminer DOC Exil 2024 from Baron di Pauli is an expressive white wine from South Tyrol, combining the grape variety's intense aromatic character with an elegant structure. The grapes come from the Höfl unterm Stein vineyard in Söll, above Tramin, situated at approximately 500 metres above sea level. The gravelly, limestone-rich and clay soils contribute to the wine's depth, character and lively freshness.
The winemaking process focuses on preserving the grape's distinctive aromas. Following twelve hours of cold maceration, fermentation takes place in stainless steel tanks. The wine then matures for five months on its fine lees, also in stainless steel, developing a pronounced structure while retaining its aromatic intensity. It pairs particularly well with Asian cuisine, spicy fish dishes, seafood and refined vegetarian creations.
In the glass, the Exil displays an intense yellow colour with delicate golden reflections. Its complex bouquet reveals fragrant rose petals, exotic lychee and spicy cloves. On the palate, it is concentrated and well-structured, offering flavours of ripe fruit and subtle Mediterranean nuances. A long, pleasantly spicy finish completes the tasting experience.
