The Sauvignon DOC from Castel Juval Unterortl comes from a south-facing parcel near Naturns at around 570 metres above sea level. The vines are approximately 23 years old and grow on gravelly, well-drained soils. The wine is part of the estate’s certified organic production and is made from carefully hand-harvested grapes. After harvest, the whole bunches are gently pressed. The wine is then aged on the lees for twelve months, mainly in used wooden casks and partly in stainless steel. This restrained approach preserves the grape variety’s freshness and precision while adding further depth and structure. In the glass, the wine is bright and clear. The bouquet shows delicate floral notes, white peach and a fresh, precise aromatic profile. On the palate, it is smooth, balanced and lively, with fine acidity, elegant structure and a persistent, harmonious finish.
