The Schlossgarten Sauvignon DOC 2023 from Pitzner Estate originates from vineyards in Cardano at around 380 metres above sea level. The vines are rooted in deep, sandy porphyry soils, a defining feature of the area that contributes distinctive minerality to the wines. Combined with South Tyrol’s favourable climate and hillside vineyards, these conditions allow the grapes to develop freshness and remarkable aromatic intensity. The grapes are harvested by hand and carefully selected before vinification. After gentle pressing, the must is clarified through natural sedimentation. Fermentation takes place slowly at controlled temperatures in stainless steel tanks. The wine then matures on its fine lees for several months, primarily in stainless steel and partly in large wooden casks. This ageing process enhances complexity and structure while preserving varietal purity and freshness. In the glass, it displays an intense straw-yellow colour with delicate green reflections. The bouquet reveals aromas of apricot, mandarin and passion fruit, complemented by notes of elderflower, gooseberry and fresh mint. On the palate, it is lively and balanced, supported by crisp acidity, expressive fruit and an elegant mineral character that lingers through the persistent finish.
