The Chardonnay Fuxberg 2025 from St. Pauls Winery is an expressive South Tyrolean white wine that combines exotic fruit aromas with elegant creaminess and harmonious richness. It originates from the sun-drenched vineyards surrounding the historic wine village of St. Pauls near Eppan. The name Fuxberg recalls the former Fuchsberg Castle, which once stood on a hill originally formed from a glacial lake. The south-facing vineyards lie at elevations between 250 and 350 metres above sea level. Calcareous soils, characterised by marl and gravel, define the growing conditions for vines approximately 15–20 years old. Slow, temperature-controlled fermentation takes place in stainless steel tanks and small wooden barrels. The Chardonnay subsequently matures on its fine lees, developing its smooth, supple texture. In the glass, it displays a brilliant yellow colour. Its complex bouquet reveals aromas of ripe pineapple, mango, banana, yellow apple and nectarine, complemented by floral nuances and delicate hints of vanilla and caramel. On the palate, it impresses with a creamy texture, balanced body and a long, intense finish.
