The Sauvignon DOC “Schliff” 2023 from Cantina San Paolo is an expressive white wine from South Tyrol that reflects the mineral-driven style of the vineyards around St. Pauls in the Überetsch area. The grapes come from southeast-facing vineyards located at around 420 to 490 metres above sea level. Morainic soils rich in limestone and porphyry shape the terroir and give the wine its distinctive minerality and structure. The wine is made from Sauvignon Blanc. This internationally known grape variety is valued for its aromatic intensity and lively acidity. In South Tyrol it produces elegant and precise wines with vibrant fruit, herbal notes and a clear mineral character. At Cantina San Paolo the grapes first undergo a short skin contact, followed by temperature-controlled fermentation in stainless steel and partly in tonneaux. The wine then matures for around nine months on the fine lees, gaining additional complexity and structure. In the glass the wine shows a pale straw-yellow colour. The nose reveals complex aromas of elderflower, mango, gooseberry and grapefruit, accompanied by subtle herbal nuances and a hint of flint. On the palate the Sauvignon is juicy and mineral, with elegant structure and lively freshness. The finish is long and precise.
