The Sauvignon Blanc Aries 2024 from Ansitz Kränzel is a complex white wine from Cermes near Merano, combining aromatic freshness with delicate spice and elegant structure. The grapes grow in Kränzelhof's vineyards at elevations ranging from 292 to 700 metres. Soils characterised by moraine deposits and granite contribute to the distinctive character of this South Tyrolean wine. Aries comes from organic viticulture and showcases the diverse qualities of Sauvignon Blanc. The winemaking process combines five to six different techniques. Three selective harvest passes allow grapes at different stages of ripeness to be processed separately. A small proportion of particularly ripe grapes adds further aromatic depth. Cold maceration, fermentation on the skins and a four-month period of whole-bunch processing contribute to its complexity. Temperature-controlled and spontaneous fermentations complete the winemaking process. In the glass, Aries displays a pale straw-yellow colour with greenish reflections. The bouquet reveals aromas of gooseberries, green apple, tropical fruit and fresh herbs. On the palate, it is finely structured and slightly creamy, with subtle hints of vanilla and floral notes. Citrus freshness, mineral nuances and delicate spice complete its harmonious character.
